Low fat paella

From Ainsley Harriott's Low Fat Meals in Minutes


  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 1 red pepper, cored, seeded and sliced
  • 1 garlic clove, crushed
  • 200g long grain rice
  • 175g lean, smoked ham, roughly diced
  • 900ml chicken or vegetable stock
  • half a teaspoon each of paprika and ground tumeric
  • a few saffron strands
  • 100g large prawns, thawed if frozen
  • 100g frozen peas
  • salt and freshly ground pepper


  1. Heat the oil in a large frying pan and cook the onion for 3-4 minutes until softened and golden
  2. Add the red pepper, garlic and rice and stir fry for 1 minute
  3. Add the ham, stock, paprika, turmeric and saffron, bring to the boil and simmer for 12 minutes
  4. Stir in the prawns and peas and cook for a further 3-4 minutes, until the rice and vegetables are tender
  5. Season to taste then serve immediately
